Preheat the oven to 170°C.
Set whole cauliflower in a baking pan (you can leave the stem and leaves on). Drizzle olive oil to cover the entire cauliflower.
Sprinkle with 1 tsp salt, and roast in the oven for 1.5-2 hours. Every 30 minutes or so, baste the cauliflower with the olive oil from the pan by spooning it and pouring it back on top.
You can tell the cauliflower is done when it is golden brown and super tender to touch.
Remove from oven and immediately pour over Plant-Based Cheese sauce. Crack some fresh black pepper on top, let cool for a minute and then enjoy.
