4 tacos 1 sweet potato 150 g black beans 100 g corn 4 tbsp tomato sauce 1 tsp chilli powder 1 tsp cumin salt pepper 2 tbsp olive oil parsley 75 g vegan feta cheese

Let's get started

Preheat the oven to 200 degrees and line a baking sheet with parchment paper.

Dice the sweet potato and add to the baking sheet together with the olive oil, salt, and pepper to taste the chili powder. Mix until well combined and bake in the oven until the potatoes are soft around 15 mins.

Drain the beans and cook them in a pan until warm and soft, add 1 tsp cumin, and corn, and crumble in the Greek White.

Add the tomato sauce to the tortillas, together with the sweet potatoes, beans, corn, Greek White, and fresh parsley.
