Cut the peppers into about 1 cm squares.
Heat the canola oil in a frying pan and saute the peppers and tofu meat over medium heat.
When cooked, add spices in order.
Add more soy sauce if needed.
When the flavors are right, turn off the heat and stir in the basil pesto. If you have kaffir leaves, add them in.
Serve over rice, top with basil leaves, and voila!
