Cook tortillas in toaster for 3 minutes.
In a frying pan, saute the tofu meat in oil. When cooked, add the spices (cumin and cayenne pepper).
Chop one tomato and add it to (2).
When the water is gone, add ketchup and salted koji to taste.
Cut lettuce and tomatoes into easy to serve pieces.
Make guacamole dip by mixing avocado with lemon juice, salt and black pepper.
Serve on tortillas in this order: tofu meat, lettuce, guacamole, tomatoes, and voila! I used sprouts for the topping, but you could use edible flowers or shredded onions if you like!
